Project Halcyon Distillery
A wonderfully imaginative menu with cool speakeasy vibes. Not too busy so it was perfect for a date night and not too loud. Great atmosphere and carefully made bespoke cocktails. We asked for several cocktails to be tailored to flavours that we liked and we were delighted with the outcome. Ciara went above and beyond and my partner and I had the best evening there. Looking forward to going back and we would highly recommend to anyone!

What a place. Empty but beautiful. It took us a while to find it. It’s not the Crystal Maze. It’s a better challenge - cocktails are the prize! You go down to the 1st floor which is odd given you start on the ground floor - but once you get in, it’s ace. Chatty staff - friendly and informative- their own gin distillery- great cocktails - why didn’t we come here sooner?

Project Halcyon is like no other cocktail bar I've been to. I'm convinced this is the best of the best. The level of service, professionalism, love of their craft and the fun that the team have brought to my every visit is unmatched.They have a wide selection of unique and interesting cocktails that are sure to interest you, but for me the quality and outright deliciousness of the classics they serve is what I come back to every time. I still cant decide if the dry, sweet or perfect Manhattan is the best, but I will keep returning until I know.Special mention on Gracie who really made our night recently when we visited for my buddies birthday. You helped make it a night to remember! Thank you :)

Had an absolutely wonderful time at Project Halcyon the other day. As it we had a late booking we were one of the only few in there, but that had no effect on the stunning atmosphere of Halcyon. The staff, especially the head bartender, were incredibly welcoming and hospitable, even offering us a free glass of champagne to celebrate our anniversary! The cocktails are incredibly original and inventive, taking inspiration from world history and crafting truly fascinating stories. Favourites include ‘Repeal’, ‘The Fall of Constantinople’ and ‘Snuff’! Would highly recommend, absolutely 5 stars for everything. Can’t wait to return!

Project Halcyon is the blueprint of a high-end, speak-easy bar. Ciara was the highlight of our trip to Manchester with her personality, entertainment and skill.We had cocktails all across the board (signatures, classics and concoctions) and were even shown the distillery section of the bar.Project Halcyon is a lock-in for our next visit to Manny. Thank you Ciara!

Hidden away in a warehouse by the crystal maze which is very apt as no the easiest place to find but that is the point as the bar is modelled on a blues speak easy from the beginning of the last century. This a a real gem of a cocktail bar, if you like classic cocktails and maybe something a bit different then definitely hunt it out as you won’t be disappointed. I had an old fashioned with buffalo trace bourbon have to say was a very well made cocktail then went onto another classic being a boulavadier, which is a lot more bitter. Now for my wife she was out of her comfort zone, but the bartender was very attentive to her tastes and recommended a vodka cocktail called a Freya which my wife really enjoyed. Would definitely visit again

What a find! Amazing bar, great chilled atmosphere. Speak Easy vibes. Awesome selection of cocktails in a really cool menu but stand out is the Old Fashioned Trolley. Won't spoil it but what an awesome concept. Staff were great, really enthusiastic and knowledgeable about the drinks and history. Particular shout out to Gracie who was fab! All the stars

I found my new favourite bar AND favourite drink, in the same night!Project Halcyon ticked every box.The temptation to share every detail is palpable. However, I have to let you experience it all for yourself!The atmosphere is relaxed and has an easy-going, chilled-out vibe.The service is exceptional, and the staff are personable and very attentive. You're looked after throughput, whether it be water and snacks, walking you through the menu and options, taking care of your drinks if you might like to smoke, or checking-in to ensure you've everything you need at JUST the right frequency.The cocktail menu has been devised by the people who work there, with the creations being planned and executed to perfection - all on-site.Personally, I chose to drink from the Old Fashioned trolley, which is a custom-made ...I'm going to stop and let you find out for yourself. Long story short, you choose your flavours (from whiskey - to - bitters), whether you want it smoked, then sit back and watch a remarkable drink be created in front of your very eyes.I had a fantastic evening and I cannot wait to go back and introduce more people!

Ultra cool cocktail bar, hard to find but so worth the effort.Freda’s wife is the best bartender we’ve ever met, she’ll spend time explaining the menu and even designed the best drink of the night. Hint: Freja. Thanks Gracie ;-)
