Hibiki - Japanese Bistro and Restaurant | Tucked in the basement at 45 North Castle Street is Hibiki Japanese Bistro and Restaurant. Hibiki was inspired by our founder's love and admiration of the 'Izakaya' culture where people meet for drinks and snacks or meals after work to de-stress, relax and generally have a good time. We're passionate about replicating the same relaxing atmosphere and vibes that customers can enjoy right in the centre of Edinburgh.

Went to Hibiki in the summer and chose it again for a lunch in town at the weekend based on that experience. Was not disappointed. The service is impeccable (the waiter even said glad to see you again), The food is amazing. The best duck spring rolls I have ever tasted in my life. There were many Japanese clients which is a great positive indication too!This will be a recurring favourite!

Friendly staff and comfortable atmosphere make a great home for the wonderful food. Highly recommended if you're after some sushi or Unagi.

I tried Hibiki for the first time.The atmosphere was good. Not a big selection of non-alcoholic drinks that could be an improvement.The staff was polite and friendly.The food was okay.The food felt microwaved. It wasn’t very warm when I got served at the table. Like when you reheat it and leave it on the counter until the rice is done.My chicken tasted a little bit old and dried out. And the curry was just a little bit warm, almost cold.I feel the portions could be bigger a little bit.The eel that you can see in the second picture, right side, 2 pieces of that cost almost £8.For my taste, the miso soup felt a bit too salty.There were also only 2 tables occupied, on late Sunday afternoon/evening. That might explain the old food taste.Overall, I’d rate it as a very average restaurant with nice decorations.It’s worth trying out once, maybe order with delivery but not a place that would make me come back regularly.

Clam atmosphere. Nice and quick service. The food was average but only that it is so little. The sasimi was thin and just small portion of rice. Even I am a small person, I was left hungry. Compare to 30 pounds meal, I expect a bit more. The service charge is 10 percent.

Found this little Gem in Edinburgh. Tonkatsu Ramen, Unagi Don, Chicken Teriyaki Don were excellent choice when we were there last night! Atmosphere and service is excellent!

Amazing staff very friendly family atmosphere. Very quick service seeing as they made the sushi fresh as we ordered it. The mains were also great and serving sizes were huge.

Very good and tasty food, nice flavors and great presentation. Traditional and authentic atmosphere with fresh food. The sushi was very good and the staff very friendly and efficient. The restaurant is a bit hidden as it is located in the basement but worth a visit. The whole experience was wonderful

Tried for the first time. We ordered Sushi set B, Prawn and vegetable tempura and Tantanmen ramen. Tantanmen here is not something you can find in Japan and noodles were too soggy. Sushi rice is not properly prepared and too wet. Rice grains were stuck each other. That’s the reason why it is not so good. Sushi presentation was good. Tempura dipping sauce was too sweet. I had to add some more soy sauce. Also, soy sauce is healthy one which is reduced salt one. In my opinion, reduced salt soy sauce is not good in taste but for health.

I was at Hibiki on Saturday for a celebration dinner. There were 18 of us across 2 tables, along with some additional walk in customers. The service was excellent, the food was quick to arrive, considering how many of us there were & everything was hot! The staff never appeared overwhelmed, nothing was a problem & I was so impressed by their memory of who was eating what! Such great value for money too. Highly recommend!!
